Spicy Baked Potatoes
Spicy Baked Potatoes If you like things spicy, you can’t miss out on this wonderful masterpiece. I especially love them with a nice meat and bacon sandwich. To prepare this recipe, we need to make our own spiced breadcrumbs. This requires the use of many spices such as curry, sweet and smoked paprika, garlic powder (or a crushed clove), rosemary, salt and pepper. As I explain in the recipe notes, if we want a crispier potato, we can add a few tablespoons of Parmesan cheese to the breadcrumbs.
Ingredients
- 1kg of potatoes
- 1 teaspoon rosemary
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 2 tablespoons smoked paprika
- 1 teaspoon curry powder
- Q.B. Salt
- 1 tsp pepper
- 40g extra virgin olive oil
- 50g breadcrumbs
Directions
- Peel and slice the potatoes, rinse them in water and dry them with a tea towel.
- Let’s prepare the breadcrumbs. Take a small bowl or cup and pour in the breadcrumbs, sweet paprika, curry, smoked paprika, pepper, garlic and salt, mix together and put aside for a second.
- Place the potatoes in a large bowl and add the oil. Stir until the potatoes are well coated with the oil.
- Add the flavoured breadcrumbs and mix with a spoon (mix the potatoes until the breadcrumbs are evenly distributed).
- Place the potatoes on a baking tray lined with greaseproof paper and bake in the oven at 200 degrees for 30 minutes.
Notes
- You can add a few spoonfuls of Parmesan cheese to the breadcrumbs for extra crunch and flavour.
