I really needed to get into the kitchen, I really needed to escape my thoughts with a new work, for days I had only one word in my head “pancakes”, but I didn’t want to make classic pancakes, I wanted to make something I had never tasted and never made before, so I googled for some interesting recipes, but in the end I couldn’t find anything, so I took a cue from an American recipe, making sure to put a lot of my own spin on it, so I created my own recipe.

In the middle of my work, I had my doubts that they wouldn’t be that good, but I kept going until I finished taking the pictures for the website and after a long wait, the best moment, the most awaited moment…

I taste it and in a moment I am in an American diner, sitting at the last table, the wall behind me, the waitress is juggling between half empty tables and I look out the window at cars hurrying towards something or someone, suddenly there is a noise, I jerk, I look down and see a plate of XXL pancakes, I look up and the waitress in a hurry as if the room was full fills my cup of coffee, she smiles and turns away, leaving me behind.

XXL pancakes are a wonderfully good recipe, they have become one of my favourite recipes, I can hardly get the taste of these wonderful pancakes out of my mind, you have to try them to believe it!.

The recipe is very simple, just take all the ingredients and put them in the bowl of the planetary mixer and let it do the work for us! This pancake recipe is different in that these pancakes are made with the addition of wholemeal flour, enough talk, let’s go and see how to make these wonderful XXL super pancakes.

Ingredients

  • 180g wholemeal flour
  • 180g cake flour
  • 100g sugar
  • 1 sachet baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • 450g milk
  • 80g butter (melted)
  • 1 vanilla pod
  • 1 egg
  • Chocolate nuggets

Directions

  • The recipe is very quick and easy to prepare, first you need to weigh all the ingredients you have read before.
  • Pour the flour, sugar, baking powder, bicarbonate of soda, salt, milk, butter, vanilla and egg into the mixer. Whisk on medium-high speed until all the ingredients are well blended.
  • Once the mixture is well blended, take a 20cm frying pan, add a small knob of butter, once melted pour a ladle and a spoonful of the mixture into the pan, add some chocolate nuggets (if desired), cover with a lid and cook until the top is cooked, to make sure the mixture is cooked, test with a toothpick if you insert it in the middle and it comes out dry, our XXL pancake is cooked.
  • We repeat the same procedure as for the first pancake and in no time at all we have prepared fantastic XXL pancakes, arrange them in a stack of three, put a piece of butter in the middle (just in case we like it) and sprinkle with honey or maple syrup, depending on your taste.

Notes

  • Pancakes should be cooked at a temperature of 5 on the induction hob and on a low heat on the oven.
