Baked potatoes from TikTok

I was scrolling through a thousand TikTok videos when I came across this recipe for super crispy baked potatoes. It involves peeling the potatoes, as you can see in this version, boiling them in water with garlic and rosemary, and then pouring them into a baking dish with a parmesan cream. However, I have made some personal changes to the recipe. I decided to combine two of the things I usually look for when making baked potatoes: an extra crunch thanks to the breadcrumbs and a garlic-based seasoning mix.

For this recipe you need potatoes, you can use the variety you prefer, good quality extra virgin olive oil, breadcrumbs (preferably the Mulino Bianco with the red packet, which I love), garlic powder, lots of rosemary (one of my favourite spices after basil), salt and pepper.

The preparation is relatively quick and the result is guaranteed. I almost sound like one of those pot sellers on TV, haha! Anyway, I made this recipe yesterday and I can assure you that no one had a chance to taste it because the potatoes were my personal treasure (I’m joking, of course).

Ingredients

  • 1kg of potatoes
  • 1 clove of garlic
  • Q.B. Rosemary
  • 1 teaspoon garlic powder
  • Q.B. Salt
  • Q.B. Pepper
  • 40g extra virgin olive oil
  • Q.B. Breadcrumbs

Directions

  • In a large saucepan, add cold water, the peeled garlic, a sprig of rosemary and the peeled and washed potatoes (rinse until the water is clean) and blanch for 10 minutes.
  • While the potatoes are boiling, put the oil, salt, pepper, garlic and rosemary in a bowl (if you are using fresh rosemary, it must be washed and finely chopped; if you don’t like it chopped, leave it whole and remove it at the end of cooking, or use the one in the jar).
  • After 10 minutes, drain the potatoes and remove the garlic and rosemary. Shake the potatoes vigorously in the sieve so that the surface is rough, then pour the potatoes into the bowl in which we have prepared the spices and mix everything well.
  • Place the potatoes in a baking tin lined with greaseproof paper, sprinkle with breadcrumbs and turn with a spoon to ensure that the breadcrumbs cover the entire surface of the potatoes.
  • Bake at 220 degrees for at least 40 minutes, checking for colour. When golden brown, remove from the heat and enjoy.

Notes

  • You can add a few tablespoons of Parmesan cheese to the breadcrumbs for extra crunch and flavour.
